Sun Siyam Iru Veli embarks on an exquisite culinary journey with the arrival of Michelin-starred Chef Jacopo Chieppa. Renowned for his passion for leavened creations and his innovative approach to Italian cuisine, Chef Chieppa brings his culinary artistry to the shores of Maldives, curating recipes and crafting exceptional dining experiences exclusively for guests at the resort.
At Sun Siyam Iru Veli, Chef Chieppa spearheads an exclusive gastronomic collaboration, sharing his expertise through hands-on training with the resort’s culinary team while crafting innovative recipes and menus for Roma, its overwater restaurant renowned for championing Mediterranean flavours. This collaboration reaches its pinnacle with two exclusive dinners hosted by Chef Chieppa on the evenings of March 10th & 13th, 2025, for guests to experience. These intimate evenings will showcase his signature dishes paired with an exceptional selection of wines, with each meticulously designed course promising a refined and evocative dining experience at Sun Siyam Iru Veli.

Chef Chieppa’s culinary visions are brought to life at Equilibrio, a fine dining restaurant in Liguria’s picturesque Dolcedo village. The menu here reflects a deeply personal cuisine inspired by his life and the rich bounty of his homeland. The restaurant is housed in a restored mill by a gentle river, and earned its first Michelin star within two years of opening. Chef Chieppa’s creations often reflect personal stories, like the “Minestrone on Canvas”, designed to create a fun way for his daughters to eat minestrone or the nostalgic “Picnic” dish that is an ode to the first time he arrived in the countryside and imagined a family picnic. Central to his culinary philosophy is the art of breadmaking, which is featured in every meal, from his “Farmer’s Focaccia” to inventive pizzas.

Prior to opening Equilibrio, Chef Chieppa refined his skills under the guidance of Mauro Colagreco at the world-renowned Mirazur, where he honed his talents in haute cuisine. His pizzeria, Kilo, is also celebrated for its meticulous dough preparation and commitment to local ingredients, securing a place in the prestigious 50 Top Pizza rankings.
