NH Maldives Kuda Rah Resort has announced the opening of its newest food and beverage outlet, Malaa – The Maldivian Café. This exciting addition invites guests to experience the rich and vibrant flavours of traditional Maldivian cuisine in an authentic and immersive setting.

At Malaa, guests can enjoy a carefully curated menu of local dishes and participate in hands-on Maldivian cooking classes led by the resort’s award-winning Executive Chef Farish Mukhthar. With over 22 years of experience in the culinary and hospitality industry—across five-star and ultra-luxury resorts in the Maldives—Chef Farish brings a wealth of expertise and creativity to every plate. Trained under renowned European celebrity chefs, his passion for Maldivian gastronomy shines through every dish.

The café uses locally sourced ingredients, including produce from nearby islands and herbs from the chef’s very own garden within the resort. Guests can look forward to learning how to prepare local favourites such as Maldivian curry, fresh salads, and traditional sides like Roshi (Maldivian flatbread), breadfruit, and sweet potato. Signature ingredients like fresh and smoked fish, coconut, and Githeyo Mirus (the locally grown Scotch bonnet chili) form the backbone of many dishes, offering a bold, spicy, and distinctly Maldivian flavour.
