A Gourmet Weekend Awaits as Chef Stefan Fäth Graces JW Marriott Maldives Kaafu Atoll Island Resort for a Two-Night Culinary Showcase
JW Marriott Maldives Kaafu Atoll Island Resort invites guests to indulge in a two-night culinary journey crafted by Chef-Owner Stefan Fäth of Hamburg’s acclaimed Michelin-starred Restaurant Jellyfish. Known for his French-inspired global cuisine and a signature approach that blends precision, creativity, and a deep respect for ingredients, Chef Stefan will present two distinct dining journeys on December 4 and 5, 2026.
On December 4, guests will gather on the resort’s Wahoo Beach for The Ocean Symphony, an exclusive seven-course dinner framed by lantern glow and the rhythm of the Indian Ocean. The evening will showcase Chef Stefan’s refined sensibilities, with highlights such as salmon paired with beet and leek, swordfish lifted by chilli and coriander, and an indulgent cod preparation accented with caviar and sweet potato. This is followed by an Iberico dish complemented with soy and cabbage, adding depth and warmth to the evening’s progression. The progression culminates in playful desserts, including pineapple with coconut and exotic fruits, followed by a milk-chocolate creation layered with yoghurt and blueberry.

The culinary journey continues on December 5 at Veyo with The Island Reverie, a five-course tasting menu inspired by freshness, contrast, and balance. Guests can look forward to dishes such as tuna sashimi brightened with mango and ponzu, mackerel paired with melon, feta and mint, followed by a delicate preparation of salmon with potato, dashi, and chives. The menu continues with a comforting yet elevated corn-fed chicken with celery, truffle, and apple. The evening concludes with a warm, nostalgic finish of banana, caramel, chocolate, and almond.
Chef Stefan’s cuisine is defined by elegance without rigidity, detail without complication, and a relaxed sophistication that has made Restaurant Jellyfish a celebrated destination in the heart of Hamburg’s Schanzenviertel. His culinary philosophy is deeply rooted in craftsmanship, global openness, and a lifelong respect for products, shaped from his childhood on a family farm to training in celebrated kitchens across Germany, including Michelin-starred Restaurant 1622, the three-Michelin-starred Restaurant Dieter Müller aboard MS Europa, and the two-Michelin-starred Restaurant Seven Seas. Since taking ownership of Restaurant Jellyfish in 2019, Stefan has earned a Michelin star, 16 Gault Millau points, and recognition as a Krug Ambassade.
